“Cheesy” Potatoes That Can Be Cooked or Cold-Soaked!

I (Renee) grew up in Wisconsin, the land of cheese! Cheesy potatoes were a staple of my childhood, and I’m about to take this plant-based version with me on a 500-mile trek. Based on our taste tests, this is a meal I’ll be looking forward to all trip!

Ingredients (1 Serving, 500 calories):

  • 2/3 cup instant hash browns (e.g. Idaho Spuds)
  • 1/3 cup dehydrated black beans
  • ⅓ cup dehydrated veggies, including onions, corn, and kale
  • 2 Tablespoons powdered oat milk
  • 2 Tablespoons nutritional yeast
  • 1 Tablespoon flour
  • 1 teaspoon vegetable bouillon
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¼ teaspoon turmeric (for color)
  • ⅛ teaspoon cayenne pepper (optional but yummy if you like a kick)
  • 1 cups water to rehydrate

Before the Trail:

Dehydrating:

  • Rinse canned beans and dehydrate at 135°F until they are crispy (~8+ hours).
  • For the veggies: Cut fresh onions into 1/2″ pieces. Chop Kale into 1″ squares. Parboil frozen corn. Dehydrate veggies separately at 135°F until they are crispy (~8+ hours).

Note: We start with more than a single-serving of fresh ingredients because it is hard to precisely predict how much fresh will yield a specified amount after dehydrating. We save the extra in mason jars for later recipes.

Assembly:

  • Put powdered oat milk, nutritional yeast, and flour in a small, light bag (e.g. a fold-over sandwich bag) and seal or tie shut.
  • Put potatoes , beans, veggies, bouillon, garlic, paprika, turmeric, cayenne pepper, and the small bag of powders in a sealable bag (e.g. a Ziploc).

On the Trail:

To cold soak: Combine all ingredients and water in a sealable pot or jar. Shake vigorously to mix. Wait approximately 1 hour before eating.

To cook:

  • Set the small bag aside. Combine water and other dry ingredients in a pot.
  • Cover and bring to a boil on high heat. Stir occasionally. 
  • Lower heat to a simmer. Simmer covered for one minute (it will still look watery and uncooked).
  • Remove from heat, add contents of small bag, mix thoroughly, then cover and let sit for 10 minutes, until all of the water is absorbed.

  5. I was looking at your breakfast southwest potatoes recipe. I was just curious I was planning on making some individual servings of these so my husband can just grab one add water and microwave. Would you happen to know how long to microwave it or even if it is possible to do so?

    • Definitely possible! But not sure how long. A guess to start with is 2 minutes, and then 5 minutes covered. Let us know if that works!
