Chocolate Coconut Overnight Oats

Having breakfast already made when you wake up in the morning is so convenient on the trail. Chocolate coconut overnight oats is so tasty. It is almost like eating dessert for breakfast. The coconut flakes add a nice crunch.

Ingredients (Serves 2-3 People):

  • 1.5 cups old-fashioned oats (not instant oats)
  • 1/3 cup raw sunflower seeds
  • 1.5 Tbsp cocoa powder
  • 1.5 Tbsp brown sugar
  • 1.5 cups water to rehydrate (water does not need to be exact)
  • 1/3 cup coconut flakes (topping)
  • Talenti jar for overnight soaking (or other sealable container)

Before the Trail:

Put coconut flakes in a small bag. Combine oats, sunflower seeds, cocoa powder, and brown sugar in a bag along with the small bag. Vacuum seal bag if not eating soon.

On the Trail:

Before bed: Set aside the coconut flakes to use as a topping in the morning. Combine oat mixture and water in a Talenti jar. Shake or mix. Seal jar and head to bed.

In the morning: Stir. Top with coconut flakes. Enjoy.

Tips:

  • Could be cooked in the morning rather than soaked overnight. Add more water if cooking though.
  • Old fashioned oats are less processed than instant oats keeping you full longer.
