We eat a plant-based diet, including on our long and short hiking trips. For our thru-hikes of the PCT and CDT, we put a lot of effort into planning, dehydrating, assembling, and shipping vegan meals to ourselves along the trail. Here we describe the recipes and process we followed. All of our dinner recipes include carbohydrates, protein (beans or nuts), veggies, and flavor. We tried to create nutritious and tasty meals that are also simple. Many other thru-hikers on the PCT and CDT were envious of our dinners while they were eating their ramen bombs and cold-soaked Knorr.
